What does the 1/2 in. size refer to?
It is the flare tube size—all three legs accept 1/2 in. OD flared tubing on a 3/4-16 thread.
Do the flared legs need pipe dope?

Yes, as long as the flare seats remain clean and undamaged.
What is the pressure limit?
750 psi at ambient temperature with properly flared tubing.
